Tofu Curry (instant pot)
Ingredients: (in the order of usage)
- Onion, firm tofu olive oil, half bulb garlic, ginger, red pepper, coconut milk, corn, crushed tomatoes.
- Spices: (1 tsp each) trumeric, cayenne, coriander, cumin (1/2 tsp), salt, garam masala.
- Optional: lemon juice, cilantro.
How to make it:
- Chop the onion, garlic, ginger, and red pepper.
- Saute in instant pot the onion and tofu for 4 minutes. Stir to prevent burning.
- Add the garic and the spices (except for the garam masala and salt) for 2 minutes.
- Add crushed tomatoes and coconut milk.
- Seal the pot and set to pressure cook for 7 minutes.
- Quick release.
- Add the garam masala, salt and the optional lemon juice and cilantro.
