Thai Curry Soup
Ingredients:
- 1 tbsp coconut oil
- 2 chopped onions
- 4 cloves chopped garlic
- 1 tbsp chopped fresh ginger
- 2 tbsp red curry paste
- 3 cups chopped carrots
- 3 cups chopped sweet potatoes
- 4 cups low-sodium vegetable broth, plus more if needed
- Salt and pepper to taste
Toppings:
- Minced fresh cilantro • Fresh lime juice • Coconut milk • Peanut butter
How to make it:
- Put everything for the soup in the slow cooker on high for 4 hours. Slow cookers vary, you can also cook on low for 10 hours.
- Blend the soup in batches or using a hand blender, adding more broth if the soup is too thick.
- Finish with toppings to taste.
