Green Beans, Sichuan flavor
Stir-fried green beans / 干煸四季豆 / gan bian siji dou
(This is a healthy variation of the stir-fried version)
Ingredients:
1 pound string beans, 2 tbsp sui mi ya cai (碎米芽菜), 4 cloves of garlic, sliced, 2 dried chili peppers, 1 tsp Shaoxing Wine (绍兴酒), soy sauce, sesame oil
Optional: ground pork
How to make it:
- Boil water, add the beans, add vegetable oil to keep the green color. cook for 8-10 min.
- Heat up pan with oil, add the pork and cook for a few minutes.
- Add peppers and garlic and steer for 30 seconds.
- Add sui mi ya cai and steer for a minute.
- Add green beans, wine, soy sauce, and sesame oil.
- Increase the hit and cook for 1 min.
Note: I stopped using the sui mi ya cai becasue it's too salty for my taste.
